The Power of N-O-W!

     I am going to be perfectly f-ing honest with you. Cancer can screw with you BIG time! (If you haven't already noticed!) 
     There will be scars, both physical and emotional that you will bear. You will not always want to feel like being positive, especially when you are scared or feeling shitty.
     But, one thing I've learned, is that it's okay to NOT be "perfect." 
     Let go of your old life B.C. (Before Cancer.)
     Just continue being you. 
     Release all thoughts of perfection and DO YOU!

Repeat this affirmation on a daily basis 
until you feel it:
I am whole, complete and I am glad to be ME!

It's Yummy Monday -- Chicken, Feta, Sun-dried Tomato & Spinach Wrap!

Chicken, Feta, Sun-dried Tomato & Spinach Wrap
2 (4 ounce) skinless, boneless chicken
breast halves
1/4 cup sun-dried tomato dressing
8 sun-dried tomatoes (not oil packed)
1 cup boiling water

1.In a large resealable plastic bag, combine chicken breasts and 1/4 cup dressing. Seal, and refrigerate for several hours.
2.Preheat grill for high heat. Combine sun-dried tomatoes and hot water in a small bowl. Set aside for 10 minutes, drain, and cut tomatoes into thin slices.
3.Lightly oil grill grate. Discard marinade, and place chicken on grill. Cook for 12 to 15 minutes, turning once, or until done.
4.Cut chicken into strips, and place in a medium bowl with sliced tomatoes, feta, and spinach. Toss with remaining 1/4 cup dressing. Distribute mixture between the four tortillas, and wrap. Either cut in half and enjoy cold, or place briefly back on grill until the tortilla turns warm and crispy.

It's Yummy Monday - Hawaiian Chicken Kabobs!

Hawaiian Chicken Kabobs
This is so good served with Jasmine rice and stir-fried or grilled veggies...mmmmm! ☺
3 tablespoons soy sauce
3 tablespoons brown sugar
2 tablespoons sherry
1 tablespoon sesame oil
1/4 teaspoon ground ginger

1.In a shallow glass dish, mix the soy sauce, brown sugar, sherry, sesame oil, ginger, and garlic powder. Stir the chicken pieces and pineapple into the marinade until well coated. Cover, and marinate in the refrigerator at least 2 hours.
2.Preheat grill to medium-high heat.
3.Lightly oil the grill grate. Thread chicken and pineapple alternately onto skewers. Grill 15 to 20 minutes, turning occasionally, or until chicken juices run clear.
1/4 teaspoon garlic powder
8 skinless, boneless chicken breast

Let Go of The Old . . .

When I started out on this Lymphoma journey, everything that I had "planned" for my future suddenly shifted and 
I had to release all control 
and just go-with-the-flow. 
Getting this diagnosis freed me and 
allowed me to view each day with new eyes. 
Gone are the days when I kept a regimented to-do list. 
Always fearful that I wouldn't meet my deadlines and goals.
Times are tough but I am one grateful woman to be given this life!

It's Yummy Monday- Black Bean Burgers!

Black Bean Burgers
1 (16 ounce) can black beans, drained
and rinsed
1/2 green bell pepper, cut into 2 inch
1/2 onion, cut into wedges
3 cloves garlic, peeled

1.If grilling, preheat an outdoor grill for high heat, and lightly oil a sheet of aluminum foil. If baking, preheat oven to 375 degrees F (190 degrees C), and lightly oil a baking sheet.
2.In a medium bowl, mash black beans with a fork until thick and pasty.
3.In a food processor, finely chop bell pepper, onion, and garlic. Then stir into mashed beans.
4.In a small bowl, stir together egg, chili powder, cumin, and chili sauce.
5.Stir the egg mixture into the mashed beans. Mix in bread crumbs until the mixture is sticky and holds together. Divide mixture into four patties.
6.If grilling, place patties on foil, and grill about 8 minutes on each side. If baking, place patties on baking sheet, and bake about 10 minutes on each side.
1 egg
1 tablespoon chili powder
1 tablespoon cumin
1 teaspoon Thai chili sauce or hot sauce
1/2 cup bread crumbs

Advice for the newly diagnosed...

1) You WILL get through this. There may be days when you'll want to quit...DON'T! 
2) Let go of your pride -- allow your friends and loved ones to help you when they offer to drive you to the Dr. (or for treatments, grocery shopping, etc.)
3) Live every day to the fullest. 
4) Wake up every morning and before your feet hit the floor, start the day with a grateful heart.  
5) Waiting for test & scan results can drive you crazy...try to release the worry and let it go. Living in fear is worse than living with cancer. 
6) And the most important thing to me is, LISTEN TO YOUR INTUITION! If you feel as if something is wrong, go to your doctor. AND, if you're at one of your appointments and the doctor suggests a new medicine, treatment plan, etc., and it doesn't "feel right" or you are on over-load, then there is NOTHING wrong with asking the doctor if he / she could please write the information down for you so that you can go home and do some research. (OR, go for another opinion!) YOU are in charge of your body so treat it like it is gold!

It's Yummy Monday -- Avocado Salsa!

Avocado Salsa
I am warning you now...this salsa is very addictive! You can serve it with any kind of meat, add it to mixed greens, use as a dip with some tortilla chips, add to tacos...Mmmm!!!
1 (16 ounce) package frozen corn
kernels, thawed
2 (2.25 ounce) cans sliced ripe olives,
1 red bell pepper, chopped
1 small onion, chopped
5 cloves garlic, minced

1.In a large bowl, mix corn, olives, red bell pepper and onion.
2.In a small bowl, mix garlic, olive oil, lemon juice, cider vinegar, oregano, salt and pepper. Pour into the corn mixture and toss to coat. Cover and chill in the refrigerator 8 hours, or overnight.
3.Stir avocados into the mixture before serving.

1/3 cup olive oil
1/4 cup lemon juice
3 tablespoons cider vinegar
1 teaspoon dried oregano
1/2 teaspoon salt
1/2 teaspoon ground black pepper
4 avocados - peeled, pitted and diced

What is FEAR?

There, I said it. It robs us of precious time that could be spent on more rational things. Fear is counter-productive to what we DO want out of life. I recently saw the following description and had to share it with you:
We've all been there ... lab work, doctor visits, scans, tests -- having cancer is some scary shit. When we let fear creep in, it paralyzes us and then the "monkey brain" starts taking over. Most of the worrying that we do ends up not being how we thought it would be in the end. Fear SUCKS!
