What Cancer Cannot Do....


                                     


Stir Fry Beef With Snow Peas in Only 15 Minutes!

I serve this over rice or cellophane noodles...yummy! (and, as usual, you can make it your own by adding other veggies that you like!) ENJOY!

Prep Time: 5 Minutes
Cook Time: 10 Minutes
Ready In: 15 Minutes
Servings: 4
"Stir-fried beef with snow peas in a light gingery sauce."
INGREDIENTS:
3 tablespoons soy sauce
2 tablespoons rice wine
1 tablespoon brown sugar
1/2 teaspoon cornstarch
1 tablespoon vegetable oil
1 tablespoon minced fresh ginger root
1 tablespoon minced garlic
1 pound beef round steak, cut into thin
strips
8 ounces snow peas
DIRECTIONS:
1.In a small bowl, combine the soy sauce, rice wine, brown sugar and cornstarch. Set aside.
2.Heat oil in a wok or skillet over medium high heat. Stir-fry ginger and garlic for 30 seconds. Add the steak and stir-fry for 2 minutes or until evenly browned. Add the snow peas and stir-fry for an additional 3 minutes. Add the soy sauce mixture, bring to a boil, stirring constantly. Lower heat and simmer until the sauce is thick and smooth. Serve immediately.

It's Our Anniversary!

It's hard to believe it, but today marks Rose & My 3rd Anniversary together! I love this little fur-faced girl...she has been such a bright light in my life and brings me such great joy!

And, today also is the day that I received my diagnosis for SPTCL back in 2009! Four years and still "kickin'!"
Life is soooo GOOD!

A Salad Ta-Die-For!

I was at a wedding shower once when one of my friends served this....OMG! It is ta-die-for and so easy breezy to make! ENJOY!
Oriental Ramen Broccoli Cole Slaw

2 (3 ounce) packages beef-flavor ramen noodles
2 (8 1/2 ounce) packages broccoli coleslaw mix
1 cup toasted slivered almonds
1 cup sunflower seed
1/2 bunch green onion, chopped
1/2 cup sugar
3/4 cup oil
1/3 cup white vinegar
Directions:

Before opening noodles, crush into 1 inch pieces. Open packages and set aside flavor packets.

Place noodles in bottom of large serving bowl. Top noodles with broccoli slaw, then sprinkle with almonds and sunflower kernels, and green onions.

In a separate bowl combine sugar, oil, vinegar, and flavor packets from noodles. Pour over slaw, cover and chill up to 24 hours.

Toss before serving.

Broccoli Patties...YUMMO!

These are soooo yummy! Serve them with a bowl of soup or salad on the side and you are set!
Broccoli Patties yield: 8 broccoli patties  Ingredients: 2 teaspoons vegetable oil 2 cloves garlic - minced 1/2 onion - chopped 1 (12 ounce) bag frozen broccoli - defrosted 3/4 cup panko breadcrumbs 1/2 cup sharp cheddar cheese 1/3 cup parmesan cheese 2 eggs - beaten salt/pepper  instructions: preheat the oven to 400 degrees. Lightly grease a baking sheet lined with aluminum foil. Heat the oil in a small pan over medium heat, add in the garlic and onions. Season with salt/pepper to taste. Sauté until onions are garlic are tender, set aside to cool.  Add the broccoli to a kitchen towel. Wrap the towel around the broccoli and squeeze out the extra moisture. Pour the drained broccoli into a large bowl, add the onion and garlic and mix gently.  To the same bowl, add the panko, the cheeses, eggs, and salt/pepper to taste. Mix together and form into patties, place on the prepared baking sheet. Bake in the preheated oven for 15 minutes. Flip and bake for another 15 minutes or until browned and crispy. Cancer also teaches us who REALLY matters and who needs to stay in our lives!

Back in 2009 when I first heard the words, SPTCL, I went home from the doctor's office and Googled those letters. Trisha Torrey's name was the first thing on the list and she has been a Godsend to me ever since. Not only was she helpful by providing me with other resources, or to answer questions or give advice, she has become a mentor and friend. I was honored to be asked to assist her...time for me to give back! ♥

Aaaaaa-chooo!

Let's face it, getting a cancer diagnosis SUCKS! One thing I decided right from the start, was to surround myself with people who are on my wavelength of POSITIVITY! 

I ignore the fact that I've been told what I have is "incurable." I listen to my body and affirm that NO ONE knows what the future holds, except for the Man Upstairs! If I encounter anyone who does not accept my philosophy, I let them go. This includes the medical community. No one is the "boss of me" OR my body! Negativity does not exist in my life!
